Sesame Steelhead Trout with Honey
Mustard Wasabi Sauce
Ingredients for Sauce
- 125 mL Mayonnaise, 1/2 cup
- 15 mL Honey, 1 Tbsp
- 15 mL Dijon mustard, 1 Tbsp
- 15 mL Prepared wasabi (Japanese horseradish), 1
Tbsp
- Juice of 1 lime
- 6 drops of sesame oil, 6
- 50 mL White sesame seeds, toasted, 1/4 cup
- 50 mL Black sesame seeds, 1/4 cup
- 15 mL Canola oil, 1 Tbsp
- Salt and pepper to taste
Ingredients for Trout
- 4 steelhead trout fillets (6oz/125g), 4
Instructions
- To prepare dressing, combine mayonnaise, honey,
Dijon mustard and wasabi in a mixing bowl using wire whisk. Add lime
juice and sesame oil. Mix again. Place dressing in a plastic squeeze
bottle with a small tip.
- To prepare the trout filet, season it with salt
and pepper and brush with canola oil. Dredge all sides in sesame seeds.
Heat the pan over medium high heat with a small amount of canola oil.
Add the filets one at a time. Lightly brown both sides for about 20
seconds on each side. Place on paper towel to absorb excess oil. Squeeze
dressing on a dinner plate and gently place the fish in the sauce.
