Hot Potato Salad

Ingredients

  • 1 Medium onion, chopped, 1
  • 45 mL Canola oil, 3 Tbsp.
  • 4 Cloves garlic, crushed, 3
  • 25 mL Flour, 2 Tbsp
  • 15 mL Sugar, 1 Tbsp.
  • 7 mL Celery salt, 1 1/2 tsp.
  • 1 mL Pepper, 1/4 tsp.
  • 175 mL Water, 1/4 cup
  • 50 mL Vinegar, 1/4 cup
  • 15 mL Grainy mustard, 1 Tbsp.
  • 4 Medium potatoes, boiled whole, 4
  • 250 g Smoked sausage ring, cooked, 1/2 lb.
  • 1 Small head cabbage, 1
  • Chopped parsley for garnish

 

Instructions

  • In a large skillet sauté onion in oil until golden brown. Add garlic , cook until garlic begins to brown.
  • Blend in flour, sugar, celery, salt and pepper until moistened.
  • Add water, vinegar and .mustard. Bring to a boil, stirring constantly. Boil 1 minute.
  • Dice potatoes and slice sausage into thin slices. Carefully toss into hot dressing.
  • Cut cabbage into eights and steam. Arrange wedges around edge of heated plate Add salad in centre and garnish with parsley.
  • Yield: 4
