Whole Grain Mustard
Ingredients
- 250mL Cold water, 1 cup
- 250 mL Dry mustard, 1 cup
- 175 mL Mustard seed, 1/4 cup
- 300 mL Dry white wine, 1 1/4 cups
- 250 mL Vinegar, 1 cup
- 125 mL Packed brown sugar, 1/2 cup
- 50 mL Chopped onion, 1/4 cup
- 7 mL Ground cinnamon, 1 1/2 tsp
- 6 whole Allspices, 6
- 2 mL Salt, 1/2 tsp.
- 2 mL Ground turmeric, 1/2 tsp.
- 2 Egg yolks, slightly beaten, 2
Instructions
- Stir together cold water, dry mustard and mustard
seed. Let stand 30 minutes.
- In a medium saucepan combine the wine, vinegar,
brown sugar, onion, ground cinnamon, all spices, salt and turmeric.
Bring to a boil and simmer uncovered for 10 - 15 minutes
- Strain the vinegar mixture and discard the solids.
- Stir the egg yolks into the mustard mixture .
- Stir hot vinegar liquid into the mustard mixture.
- Return all the mixture to saucepan and cook over
medium heat until thickened and bubbly. Cook for 2 minutes more and
remove from heat.
- Cool slightly and pour into decorative jars with
lids.
- Store in refrigerator.
- Yield: 3 cups (750 mL)
