Whole Grain Mustard

Ingredients

  • 250mL Cold water, 1 cup
  • 250 mL Dry mustard, 1 cup
  • 175 mL Mustard seed, 1/4 cup
  • 300 mL Dry white wine, 1 1/4 cups
  • 250 mL Vinegar, 1 cup
  • 125 mL Packed brown sugar, 1/2 cup
  • 50 mL Chopped onion, 1/4 cup
  • 7 mL Ground cinnamon, 1 1/2 tsp
  • 6 whole Allspices, 6
  • 2 mL Salt, 1/2 tsp.
  • 2 mL Ground turmeric, 1/2 tsp.
  • 2 Egg yolks, slightly beaten, 2

 

Instructions

  • Stir together cold water, dry mustard and mustard seed. Let stand 30 minutes.
  • In a medium saucepan combine the wine, vinegar, brown sugar, onion, ground cinnamon, all spices, salt and turmeric. Bring to a boil and simmer uncovered for 10 - 15 minutes
  • Strain the vinegar mixture and discard the solids.
  • Stir the egg yolks into the mustard mixture .
  • Stir hot vinegar liquid into the mustard mixture.
  • Return all the mixture to saucepan and cook over medium heat until thickened and bubbly. Cook for 2 minutes more and remove from heat.
  • Cool slightly and pour into decorative jars with lids.
  • Store in refrigerator.
  • Yield: 3 cups (750 mL)
