Devilled Eggs

Ingredients

  • 6 hard boiled eggs, shelled, halved lengthwise 6
  • 25 mL Mayonnaise, 2 Tbsp.
  • 75 mL Finely chopped lettuce, 1/3 cup
  • 10 mL Minced green onion, 2 tsp.
  • 10 mL Minced radish, 2 tsp.
  • 5 mL Finely chopped fresh dill, (2 mL/1/2 tsp. dried), 1 tsp.
  • 2 mL Prepared mustard, 1/2 tsp.
  • Salt and pepper to taste
  • Paprika for garnish

 

Instructions

  • Mash egg yolks in a bowl with a fork.
  • Add mayonnaise; mix well.
  • Add lettuce, onion, radish, dill, mustard, salt and pepper.
  • Scoop filling back into egg whites.
  • Arrange on serving plate.
  • Sprinkle lightly with paprika.
  • Makes 12 servings.
