Basic Coarse Mustard

Ingredients

  • 75 mL Mustard seed, 1/3 cup
  • 75 mL Cider vinegar, 1/3 cup
  • 1 Clove garlic, halved, 1
  • 45 mL Water, 3 Tbsp
  • 45 mL Liquid honey, 3 Tbsp
  • 1 mL Salt, 1/4 tsp
  • pinch Ground cinnamon, pinch

 

Instructions

  • In a small bowl, combine mustard seed, vinegar and garlic. Cover and refrigerate 36 hours. Discard garlic. Process mixture in a food processor with water until coarse consistency. Stir in honey, salt and cinnamon. Refrigerate in tightly sealed containers. Use within two weeks.
  • Variation, Horseradish Mustard: Add 1 Tbsp (15 mL) horseradish.
  • Variation, Peppercorn Mustard: Add 1 Tbsp (15 mL) green peppercorns, crushed.
  • Variation, Herb Mustard: Add 1/2 tsp (2 mL) or more as desired of any dried herb (tarragon, dill, thyme, basil or oregano).
  • Variation, Dijonnaise Mustard: Add 1/3 cup (75 mL) mayonnaise.
  • Yield: 1/4 cup (175 mL).
