Bean Salad with Tarragon Vinaigrette

Ingredients for Salad

  • 1 (398 mL/14oz) can green beans, 1
  • 1 (398 mL/14oz) can yellow beans, 1
  • 1 (540mL/19oz) can black beans, 1
  • 1 (341mL/12oz) can corn, 1
  • 1 white onion, sliced into rings, 1

Ingredients for Tarragon Vinaigrette

  • 125 mL Canola oil, 1/2 cup
  • 125 mL White vinegar, 1/2 cup
  • 50 mL Granulated sugar, 1/4 cup
  • 5 mL Mustard powder, 1 tsp
  • 1 Garlic clove, minced, 1
  • 5 mL Dried tarragon, 1 tsp
  • 5 mL Dried basil, crumbled, 1 tsp

 

Instructions

  • Strain and rinse green beans, yellow beans, black beans and corn. In a large bowl, combine beans, corn and onion.
  • To prepare vinaigrette: Whisk together canola oil, vinegar, sugar, mustard, garlic, tarragon, and basil. Pour onto bean mixture prior to serving.
  • Yield: 6-8 servings.
